Sometimes I want a dessert, but I’m too lazy to make cookies or a cake. Also, they have too much sugar for me. So I have created the easiest possible, nice-looking dessert: Trifle Piles. This is a trifle, piled up in layers of yummy things. And it takes, um… maybe five minutes to make. The beauty of these is that you can mix and match with whatever you have on hand. I’ve used whole wheat flour instead of gluten-free flour for my husband. 🙂 It tasted amazing, too.
Here is my main trifle pile (obviously, because it is chocolate) – but you can mix and match and make your own creation based on your faves. I want to try it with added cocoa to the yogurt. All are refined sugar free, lactose free, and low-gluten/gluten-free if you use the ingredients I did. .
All the “Chocolate Trifle Pile” is, is a chocolate mug cake and yogurt. Plus, some extra chocolate on top if you can find some yum sugar-free variety.
Chocolate Mug Cake
2 scoops of gluten-free flour (my favourite so far is 2/3 brown rice flour, 1/3 tapioca starch)
2 scoops of cocoa
2 scoops of coconut sugar (or more if you have an extremely sweet tooth!)
pinch of baking soda
pinch of baking powder
Enough milk to give it a cake batter consistency
Mix it all together well and put it in the microwave for anywhere between 40 seconds and 90 seconds, depending on your microwave. Mine takes extra long.

Chocolate Mug Cake
Natural, unsweetened Greek Yogurt
Break up your Chocolate Mug Cake with a fork so it can cool a little bit while you get the yogurt together. Then, mix maybe a cup of your high-protein Greek yogurt with a couple scoops of coconut sugar. If it’s not sweet enough, add more! It tastes great! Like brown sugar or caramel, really.
Start layering! Most of the time, I just layer them in a clear water glass. Like I said, lazy. Some cake pieces down, then yogurt mix, then cake, then yogurt, until you get to the top.
